Lactoserum: propiedades nutricionales en la práctica médica

Resumen
El lactoserum es un alimento funcional terapéutico o nutracéutico de fácil digestión y de alto valor nutricional. Por su alto contenido en aminoácidos, proteínas, vitaminas y minerales; es considerado un alimento hipernutricional que cubre los requerimientos de proteínas en diversos estados clínicos como desnutrición, traumatismo, infecciones, procedimientos quirúrgicos, cáncer, inmunodeficiencias y embarazo. Las proteínas constitutivas del lactoserum son: 1-lactoglobulina, r-lactoalbúmina, lactoferrina, 1-lactorfina, r-lactorfina, y-lactoferricina, factores de crecimiento, albúmina, serorfina y diversos péptidos bioactivos. Éstas tienen efecto anticarcinógeno, inmunoestimulante, hipocolesterolémico y antienvejecimiento debido a la abundancia de aminoácidos azufrados de sus proteínas totales, ya que la metionina y cisteína sirven de sustrato para la síntesis del glutatión, poderoso antioxidante que actúa como sustrato de enzimas que catalizan los procesos de destoxificación celular. El lactoserum también contiene una fracción de inmunoglobulinas, factores de transferencia y yglutamilcisteína que potencian la respuesta inmunitaria humoral y celular.
